Instructions

1: Preheat oven to 400F and line a baking sheet with parchment paper. Leave puff pastry in refrigerator until everything else is ready.

2: In a bowl, mix ricotta, parmesan, garlic, and season well with salt and pepper. Set aside.

3: In a separate large bowl, mix your veggies (cauliflower and kale) with olive oil and more salt and pepper.

4: Lay your puff pastry sheet on parchment paper. Use a sharp knife to score a border about 1/2” thick, then poke holes with a fork all around.

5: Spread your ricotta mixture on top within the border. Top with the veggie mixture and bake for 30 minutes, or until crust is golden and veggies are cooked to your liking.
