Chocolate Peppermint Cups

1: Line a muffin tin with 12 muffin cups.

2: Melt half of the chocolate (1 cup) and half of the coconut oil (1 tsp) using a double broiler or microwave, stirring occasionally.

3: Pour about 2 tsp of melted chocolate into each muffin cup to coat the bottom.

4: Tap muffin tin on counter to evenly distribute chocolate and place in freezer for 15 minutes.

5: Make coconut butter by blending the shredded coconut in a Vitamix until smooth, scraping down the sides occasionally.

6: Combine the smooth coconut butter with peppermint oil.

7: When the bottom chocolate layer is set, spread a layer of the coconut butter mixture onto each cup.

8: Repeat the melting process for the chocolate and pour chocolate over the coconut butter layer.

9: Pulverize candy canes in a Vitamix or crush them by hand and sprinkle over the tops of the chocolate cups.

10: Freeze for 20 minutes before serving or store in the freezer in an airtight container.
