Gluten Free Chocolate Sugar Cookies

1: Preheat oven to 350°F and line 2 baking sheets with parchment paper.

2: Whisk together butter, coconut sugar, egg, and vanilla until smooth.

3: In a separate bowl, mix all dry ingredients (gf flour, cocoa powder, xantham gum, baking powder, and salt) until well combined.

4: Mix the wet and dry ingredients until a dough forms (you may need to use your hands to form a ball of dough).

5: Allow the dough to chill in the fridge for 1 hour.

6: Roll the dough out between parchment paper, using a wine bottle if you don't have a rolling pin, and shape with cookie cutters.

7: Reform the dough into a ball and roll it out again until no dough is left.

8: Bake for 10 minutes and allow the cookies to cool completely.

9: Top with melted chocolate or frosting and sprinkles.
